The 8 cm. long bay leaves are dried less bitter than the fresh ones and have to cook or stew for a long time to impart their flavor to the dish. The leaves remain hard and cannot be eaten, remove them before serving. Laurel is mainly used in Spanish and Italian cuisine, but of course also in pea soup, red cabbage or hash.
