The tomatoes are grown in the south of Italy (Puglia, Campania, Molise ) and in part of northern Italy (Emilia Romagna). Passata is extremely suitable as a base for tomato sauce or soup. Passata Rustica is prepared in more or less the same way as the Passata. The tomatoes are pressed into larger pieces and the juice filters are coarser. The cooking time is also shorter than with regular Passata.
