Spelled is a different grain than wheat. They are both from the same grain family and have many similarities. The nutritional value is almost the same and, like wheat, spelled also contains gluten. However, some people are better able to tolerate spelled. For this flour, the spelled grain is ground so finely and sieved that it is good to use for lighter baking dishes, such as cakes and biscuits.
