Use these wafer-thin slices of pickled ginger as a side dish with sushi, along with wasabi and soy sauce. The Japanese eat sushi ginger between bites of sushi, because ginger neutralizes flavors. This way every piece of sushi comes into its own. Sushi ginger is also delicious with a salad, on a sandwich or a (vegan) hamburger. We use first-class organic ginger from paradise Fiji: islands with some of the cleanest soils in the world.
