The potassium tartrates, better known as tartar, in combination with sodium carbonates are an excellent leavening agent that gives light baked goods. For example, you can also make self-raising flour with tartar baking powder. To do this, mix 21 grams of tartar baking powder with 500 grams of flour and use as described in the recipe.
