Description
Spelled is a different grain than wheat. They are both from the same grain family and have many similarities. The nutritional value is almost the same and, like wheat, spelled also contains gluten. However, some people are better able to tolerate spelled. The whole grain is ground for whole wheat flour. As a result, this flour contains the bran and germs in addition to the flour core.
